I have eaten in 11 countries and deshi khana is still the best food in the world

I have had pasta in Rome, sushi in Tokyo, street tacos in Mexico City, and croissants in Paris at 7am. All of it was wonderful. I appreciated every bite. Nothing — and I mean nothing — compares to my mother's khichuri on a rainy day, or beef rezala from an old restaurant in Old Dhaka, or fresh ilish bhaja eaten with your hands, or a proper Sylheti shatkora curry that clears your sinuses and your soul simultaneously. I think what makes Bangladeshi food special is not just the spices — it is the intentionality. Every dish has a reason. Khichuri is for rain and illness and comfort. Panta bhat is for Pahela Baishakh and nostalgia. Ilish is for homecoming. Food here is not just nutrition. It is memory and identity and love all cooked together. Whenever I feel disconnected from home, I find a Bangladeshi restaurant wherever I am in the world. It is never quite right. But the attempt alone is enough to remind me who I am.
